This colorful, zesty recipe is one of my go-to options for New Year’s celebrations (hello, black-eyed peas for good luck!) or game-day spreads. It’s easy to throw together, packed with healthy ingredients, and always a hit with friends and family.
Whenever I can, I love using fresh black-eyed peas, cilantro, jalapenos, tomatoes, corn, and bell peppers straight from my garden. But when I’m short on time and need a quick, fresh dip, my go-to recipe below saves the day!

Ingredients:
- 1 can (15 oz) black-eyed peas, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 sweet bell pepper – either red, orange, or yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion or half of a large red onion, finely diced
- 1 jalapeño pepper, finely diced (remove seeds for less heat)
- 1 cup cherry tomatoes, diced or quartered
- 1 avocado, diced (add just before serving)
- 1/4 cup fresh cilantro, chopped
Tips for Success:
Make Ahead
I often make the dip a few hours ahead of time to let the flavors blend together. Just wait to add the avocado until you’re ready to serve—it keeps it from browning.
Customize It
I love how versatile this dip is. Sometimes I swap the black-eyed peas for extra black beans, or add diced mango for a sweet twist. Or if I need this to be a no-spice dip, I just leave out the jalapeño.
Leftovers
If there are any leftovers (rarely happens!), I store them in the fridge for up to two days, minus the avocado.

Quick and Easy Cowboy Caviar
Ingredients
- 1 can - 15 oz black-eyed peas, drained and rinsed
- 1 can - 15 oz black beans, drained and rinsed
- 1 can - 15 oz corn kernels, drained
- 1 sweet bell pepper - either red, orange, or yellow bell pepper - diced
- 1 green bell pepper - diced
- 1 small red onion or half of a large red onion - finely diced
- 1 jalapeño pepper - finely diced (remove seeds for less heat)
- 1 cup cherry tomatoes - diced or quartered
- 1 avocado - diced (add just before serving)
- 1/4 cup fresh cilantro - chopped
Dressing
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1 lime (or 2 T bottled lime juice) - juiced
- 1 tbsp honey or agave nectar - optional
- 1 tsp garlic powder
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and black pepper to taste
Instructions
- Prep the Veggies: Dice all vegetables and set them aside. If using a jalapeño, adjust the amount based on your heat preference. For super quick prep I use this Fulstar chopper to finely chop all the veggies except for the cilantro and avocado.
- Mix the Base: In a large bowl, combine black-eyed peas, black beans, corn, bell peppers, onion, jalapeño, and tomatoes.
- Make the Dressing: In a small bowl or jar, whisk together olive oil, red wine vinegar, lime juice, honey (if using), garlic powder, chili powder, cumin, salt, and pepper. Adjust seasonings to taste.
- Combine: Pour the dressing over the vegetable mixture and gently toss until everything is coated.
- Add Avocado: Right before serving, fold in the diced avocado for a creamy texture.
- Serve and Enjoy: Serve with tortilla chips, pita chips, or as a topping for tacos, burrito bowls, or salads.
