Why You’ll Love This Salad
Quick & Easy – Ready in just 10 minutes!
Crunchy & Flavorful – A perfect balance of fresh, sweet, savory, and spicy (optional).
Easy to Grow in the Garden – Cucumbers are one of my favorite veggies to grow once the weather has warmed up and there are not more chances of freezing temperatures. Learn more about growing cucumbers. For this recipe I recommend growing Persian or muncher cucumbers.
Mini Sweet Peppers are a fun addition to any garden. They do take longer to grow than the cucumbers, but are worth the wait! If growing these by seed you will need to start them indoors about 8 weeks before last frost of spring. Learn more about starting seeds indoors before starting.

TIPS & VARIATIONS
Make it heartier – Turn this light and refreshing salad into a satisfying meal by adding grilled shrimp, tofu, or shredded chicken. The extra protein pairs perfectly with the fresh crunch and zesty flavors. I think grilled chicken thighs with a half and half marinade of honey and Frank’s hot sauce would be top notch!
Add extra crunch – Looking for even more texture? Toss in a handful of toasted sesame seeds or crushed peanuts for a nutty, crunchy bite.
Make it milder – If you’re sensitive to spice, simply reduce the chili oi crunchl or leave it out entirely. The salad will still be packed with flavor from the ginger dressing and everything bagel seasoning.
Store leftovers – This salad is best enjoyed fresh, but if you have leftovers, store them in an airtight container in the fridge. It will stay crisp for up to 6–8 hours, but after that, the cucumbers may start to soften.
