It’s the most wonderful time of the year! December is truly magical here in Central Texas because we can finally enjoy cooler weather but still grow veggies!

That’s right! Thanks to the climate here in Austin and the surrounding area, we can garden all year. December is a great month to plant some more leafy greens and get any seed orders you would like to add to your stockings for the holidays.

WHAT TO GROW IN CENTRAL TEXAS IN DECEMBER

We are now well into our Cool Season for winter. That means we should focus on plants that prefer temps in the 50s, 60s, and 70s. 
 
We’ve got a list of cooler-weather plants to plant now for a harvest in the new year! These plants can handle low temps when we get cold snaps and actually taste sweeter after a little frost.

Calendula, Chamomile, Cilantro, Chives, Dianthus, Dill, Fennel, Pansy, Parsley, Oregano, Viola

Thanks to our mild winter, there’s no reason we can’t have garden-fresh herbs at our fingertips all winter long! The key for growing perennials like sage, rosemary, and oregano, which will be so delicious in warm winter dishes, is to start with a mature plant instead of by seed.
