Peach Filling:
5cupssliced peaches
1/4call-purpose flour
1/2csugar
1/8tspsalt
1Tlemon juice
1tspvanilla extract
Crisp Topping:
3/4cpacked brown sugar
1call-purpose flour
1.5tspground cinnamon
1/4tspsalt
3/4cbutter, cut into small slices or cubes
1cquick oats or old fashioned oats
Instructions
Set your oven to 350°F and lightly grease a 9x9 baking dish (or something similar in size).
In a large bowl, toss your sliced peaches with flour, sugar, salt, lemon juice, and vanilla until everything is evenly coated. Pour the mixture into your prepared baking dish and spread it out into an even layer.
Option 1: Using a food processorAdd the brown sugar, flour, cinnamon, and salt to the bowl of a food processor and pulse once or twice to combine. Add the cold butter cubes and pulse until the mixture is crumbly and resembles coarse sand. Finally, pulse in the oats until just combined.Option 2: By hand (no food processor needed!)In a medium bowl, whisk together the dry ingredients. Add the cold butter and use a pastry cutter, two forks, or your fingers to work the butter into the mixture until you get that same crumbly texture. Stir in the oats last.
Sprinkle the topping evenly over the peach filling. Bake for 40–45 minutes, or until the top is golden and crisp and the peaches are bubbling around the edges.
Let it cool for about 10–15 minutes before serving (if you can wait that long!).
